Em’s breakfast

After an outbreak of hives I am experimenting with removing Dairy from Emery’s diet to see if he is allergic. So. That makes breakfast a big question as we often have “Red River” cereal, a Canadian classic. (which we all adore with blueberries!)
Good thing Emery is happy with noodles for breakfast. I mean what kid isnt? My kids love noodles. I bought Brown rice fusilli, just to switch it up a bit. Always good to mix up the grains instead of all-wheat all-the-time.
I made a pesto sauce with no cheese. It went over well. So well in fact, I had some for my own breakfast as well!
In the blender I put:
Dairy-free kale pesto:
1T cashews
1T pine nuts
1 leaf kale
2 sm cloves garlic
salt to taste
1/2 lemon juice
and enough olive oil to get the whole thing to move.
Pour over hot noodles and enjoy!
(I should add that the measurements are very rough. I didn’t actually measure at all, and I always taste and add more garlic/lemon/salt to taste.
) Oh, and I used Kale because its what I had, but it would scrumptious with basil, or cilantro…

Yum – a dairy free pesto recipe … I’m going to have to try this!

I eat non-breakfast things for breakfast all the time! I was also going to suggest almond or soy milk on your hot cereal or eggs for breakfast. My kids devour eggs. Muffins and pancakes are other good breakfasts, and you know how I feel about muffins! Hope everyone is feeling better soon – poor guy. I remember when he was a baby with eczema – wonder if it’s related to that.

Yeah! Michelle, I have been thinking of you as we look for dairy free alternatives. We got Emery sone coconut milk ice cream popsicles from Community Natural Foods that are to die for! Eating those certainly doesnt make dairy free ice cream craving an issue!
Yes, eggs are good. Ive made Almond milk but we run out so quickly! I need to make a bulk order of raw almonds somehow. We do pancakes A LOT. Im still not sure if its dairy thats giving him hives, but that alternatives are so great, its not a problem so far. I am sure that the eczema is related. He has similar skin to me. I had issues with both things at his age too. Hes never liked cheese, and he wont drink milk, thats what gave the idea to start with dairy.
Yes. Muffins rock! I need to make more. We do scones quite a bit, butt hey have butter. I need a dairy free scone recipe…
